We all know porridge is good for us; keeping us full of slow release healthy carbs that will regulate our blood sugar and keep us feeling full till lunchtime but it is easy to get bored of oats three or four times a week. I hope you will love this twist on your breakfast oatmeal!

***If you are avoiding nut products swap out the coconut for oat or rice milk and enjoy the sweetness pineapple brings to your morning brekkie!

  1. Add the porridge oats, water desiccated coconut and pineapple into a saucepan
  2. Stir for 2 minutes until the oats have soaked up the water
  3. Add in the coconut milk (or oat / rick milk) and continue to stir until you have reached the desired consistency
  4. Serve in a bowl and enjoy!
