Eggs are one of the healthiest foods you can eat and having an egg allergy or intolerance is not as common as you may think. Even my IBS ladies who have experiences egg issues in the past often find that once their gut has healed they are able to digest these occasionally.

They are worth persevering with providing you know you are not 100% allergic to them.

Great sources of calcium, vitamins d, healthy fats and many more minerals. Source your eggs as well as you can in order to be confident they are organic, pasture raised from healthy chickens. It does make a difference and not just ethically.

  1. Heat a pan with the butter and stir in the eggs with a wooden spoon until scrambled.
  2. Stick the toast in to brown.
  3. Once the toast is ready slice the tomato, cover with scrabbled eggs and garnish with parsley and black pepper for extra nutrients and anti-oxidants.
