Sweet Potato (and Chicken) Curry
I am not normally a fan of curries but this home made version was really tasty and had loads of great nutrition in it. Fabulous vitamin A for tired eyes and hot spices to reduce inflammation.

  1. Brown the chicken off in some olive oil, drain and leave to one side.
  2. Bring the potatoes to the boil in a pan of water and simmer for no more than 5 minutes.
  3. Heat some oil in a pan and stir in the curry powder (or paste) and cumin seeds.
  4. Once these are thoroughly combined and heated through to a sticky paste, add the coconut milk and the rest of the spices. Stir through completely.
  5. Next get the rice on to boil, adding the salt, to taste.
  6. Add the chicken and potatoes to the curry sauce, continue to stir whilst the sauce reduces down to a thick sauce.
  7. Once boiled, simmer the rice for the allotted time (usually about 8 - 10 minutes) and stir with a fork once cooked.
  8. Service the rice and the curry and enjoy!
