Carrot and Ginger Soup
This winter warmer is as good in the spring and summer as it is when it's cold outside. So simple, so tasty and really easy to make.

  1. Boil a kettle of water.
  2. Peel and chop the potato and carrots into thin slices and add to a saucepan.
  3. Cover the veg with water and add the stock cube.
  4. Grate the ginger into the soup and simmer for 20 - 25 minutes.
  5. When the veg are cooked through and soft take the pan off the heat and blend with a hand blender.
  6. When desired consistency reached label into a bowl, drizzle with cream and garnish with fresh herbs.

Soups are so easy to make and one of my go to foods when I cant be bothered to make anything fancy.
